CHICKEN MAJBOOS

                             I am not a person who likes to try out new cuisines for myself eventhough i make those at home for dh and jr......................so i was really doubtful wheather to try the chicken majboos or not eventhough hubby dear had lots to say about it..................before coming to middle east i had a really bad misunderstanding that arabic food is something prepared without any spices..............so its natural that me being the typical indian who likes really spicy food thinking twice before having this arabic rice...........but once i had this rice i had a complete change of my mindset.....................its true that majboos doesnt have many spices in it  but what little is there gives it a very nice flavour......................this is the case with all arabic foods................... this is also so easy to prepare.................no elaborate steps like in our biriyani.............but i dont want to compare this with biriyani...................becoz both are 2 extremes...biriyani is always biriyani...................o.k leave all that...............lets have our majboos ready................try your aprons get set go.......................try this and enjoy...................



INGREDIENTS:

RICE                           -2 CUPS
CHICKEN                   -1/2 KGCUT INTO BIG PIECES
ONION CHOPPED     -1
TOMATO                     -1
MAJBOOS MASALA  - 1 1/2 TBLSPN
DRIED LEMON            -3
CINNAMON                - 1 INCH PIECE
CLOVE                          - 1 TSP
PEPPER CORNS            -1 TSP
ghee                                  - 1 tblspn
CORIANDER LEAVES FOR GARNISHING
SALT TO TASTE

MAJBOOS MASALA AND DRIED LEMON ARE AVAILABLE IN ALL GROCERY STORES THAT SELLS ARABIC SPICES...................




METHOD:

IN A LARGE POT ADD CHICKEN, LEMON,CINNAMON,CLOVE,PEPPER CORNS,ONION,TOMATO AND 1 TBLSPN MAJBOOS MASALA AND SALT....................ADD LITTLE WATER AND COOK CHICKEN.................WHEN IT IS COOKED REMOVE CHICKEN PIECES.CINNAMON AND LEMON.............KEEP IT ASIDE..............DRAIN THE OTHERS AND KEEP THE STOCK.................WE ARE GOING TO PREPARE THE RICE IN THIS CHICKEN STCK..........................PREHEAT OVEN TO 180C...........GRILL THE CHICKEN TILL BROWN.............MEANWHILE PREPARE RICE............ADD A LITTLE GHEE IN A NONSTICK PAN .............................ADD CINNAMON..............WHEN IT SPLUTTERS ADD REMAINING MAJBOOS MASALA AND RICE............FRY FOR 5 MIN.................THEN ADD  THE RESERVED LEMON................ADD 4 CUPS OF THE STOCK AND COOK THE RICE TILL ALL WATER EVAPORATES......................WHEN SERVING ADD THE RICE IN A PLATE AND ABOVE THAT PLACE THE GRILLED CHICKEN......................... SERVE HOT................ENJOY...............

CHICKEN FRIED RICE

                                                        It is very true that food is a great mood stabilizer...............when iam bored or in a low spirit i just go to my kitchen and cook some of my favourite food.............its surprising that iam so calmed and happy after that.................i dont know if any of u had like this in your life.............but for me cooking and eating some of my favorite food are the best mood enhancers...............

Fried rice is one of my favourite food....................one dish which will never fail me...................every one have their own versions of fried rice...............so here iam giving my version.................try this and enjoy............


INGREDIENTS:

RAW LONG GRAIN RICE                          -2 CUPS
WATER                                                         -6 CUPS
MIXED VEGGIES OF YOUR CHOICE       -1 CUP
[I USED CARROT,FRENCH BEANS,
CABBAGE..................]
CAPSICUM SLICED                                    -1
SPRING ONIONS[WHITE AND                  -6
GREEN PART SEPERATED]
SOYA SAUCE                                               -3 TBLSPN
WHITE PEPPER PDR                                    -1 TBLSPN
EGGS BEATEN                                               -3
CHICKEN COOKED WITH PEPPER            -1/2 CUP SHREDDED
PDR AND SALT
SALT                                                                 -TO TASTE
OIL                                                                    -4 TBLSPN



METHOD:

  1. WASH THE RICE
  2. BOIL WATER AND ADD RICE AND 1 1/2 TSP SALT
  3. COOK UNCOVERED OVER A MEDIUM FLAME STIRRING OCCASIONALLY UNTIL RICE IS COOKED
  4. TAKE CARE TO ENSURE THAT RICE IS NOT OVERCOOKED
  5. DRAIN AND ALLOW IT TO BECOME ABSOLUTELY COLD
  6. CHOP ALL VEGGIES INTO SMALL SIZE PIECES
  7. ADD LITTLE OIL IN A WOK ANG SCRAMBLE EGGS WITH PEPPER PDR AND SALT
  8. KEEP IT ASIDE
  9. IN THE SAME WOK ADD LITTLE MORE OIL AND SAUTE WHITE PART OF SPRING ONION AND VEGGIES.ADD LITLLE PEPPER PDR
  10. ADD CHOPPED CAPSICUM AND SAUTE
  11. KEEP THIS ASIDE
  12. IN SAME WOK ADD LITTLE OIL AND FRY THE BOILED RICE
  13. ADD VEGGIES,EGGS AND CHICKEN AND SAUTE
  14. ADD SOYA SAUCE AND PEPPER PDR{IF U WANT IT MORE HOT}
  15. TRANFER TO A SERVING PLATE AND GARNISH WITH SPRING ONIONS
  16. ENJOY..........................

malabar prawns biriyani

                         This is my first post in this blog.so i thought i would add something grand.in our home my DH "S"and sweet son "S"cannot think of anything grand without biriyani.my mom"S"and sis-in-law''s''makes the best biriyani i hav ever tasted.i learned the art of making this delicious dish from them.so this post is dedicated for all the loving''s'' in my life.
Ingredients
cleaned and deveinated prawns-500gms[1/2kg]
oil for frying-200ml
onions sliced-250gms
basmati rice-500gms
ghee-100gms
chopped coriander leaves-1 bunch
tomato-250gms
chopped pudina leaves-1handfull
curd-1/2cup
garam masala pdr-1tsp
lemon-1
salt-to taste
                          
                               Ingredients for marinating prawns
red chilly pdr-1tsp
turmeric pdr-1/2tsp salt-to taste
                  
                   for grinding
green chilly-50gm
ginger-30gm
garlic-30gm
grind this to a coarse paste.
            method
marinate the prawns and fry them in oil.it should not be crispy.keep them aside.in the remaining oil saute onions till its golden brown in colour.then add the ground paste.when it is sauted add tomatoes and saute till oil oozes out from this.after that add thecurdand saute.then add the chopped coriander and mint leaves,garam masala pdr,fried prawns and salt.saute it for sometime.turn off heat and keep it aside.now the masala for biriyani is ready.next step is the preparation of rice
for that cook rice till it is 3/4th done.add the lemon juice to this so that the rice does not stick to each other.drain and keep aside.
next step is the DUM or layering stage.for this preheat oven to 160.in a heavy bottom vessel add half of the cooked rice.then above that add a little ghee.then add half of the prepared masala.above that add rice.repeat layering till everything is done.on the top add some coriander leasves.,ghee.v can also add some fried onions and nuts.i avoided this as my son doesnt like this.close the lid and bake for 30min.ur delicious biriyani is ready.serve hot.
