It is very true that food is a great mood stabilizer...............when iam bored or in a low spirit i just go to my kitchen and cook some of my favourite food.............its surprising that iam so calmed and happy after that.................i dont know if any of u had like this in your life.............but for me cooking and eating some of my favorite food are the best mood enhancers...............
Fried rice is one of my favourite food....................one dish which will never fail me...................every one have their own versions of fried rice...............so here iam giving my version.................try this and enjoy............
INGREDIENTS:
RAW LONG GRAIN RICE -2 CUPS
WATER -6 CUPS
MIXED VEGGIES OF YOUR CHOICE -1 CUP
[I USED CARROT,FRENCH BEANS,
CABBAGE..................]
CAPSICUM SLICED -1
SPRING ONIONS[WHITE AND -6
GREEN PART SEPERATED]
SOYA SAUCE -3 TBLSPN
WHITE PEPPER PDR -1 TBLSPN
EGGS BEATEN -3
CHICKEN COOKED WITH PEPPER -1/2 CUP SHREDDED
PDR AND SALT
SALT -TO TASTE
OIL -4 TBLSPN

METHOD:
- WASH THE RICE
- BOIL WATER AND ADD RICE AND 1 1/2 TSP SALT
- COOK UNCOVERED OVER A MEDIUM FLAME STIRRING OCCASIONALLY UNTIL RICE IS COOKED
- TAKE CARE TO ENSURE THAT RICE IS NOT OVERCOOKED
- DRAIN AND ALLOW IT TO BECOME ABSOLUTELY COLD
- CHOP ALL VEGGIES INTO SMALL SIZE PIECES
- ADD LITTLE OIL IN A WOK ANG SCRAMBLE EGGS WITH PEPPER PDR AND SALT
- KEEP IT ASIDE
- IN THE SAME WOK ADD LITTLE MORE OIL AND SAUTE WHITE PART OF SPRING ONION AND VEGGIES.ADD LITLLE PEPPER PDR
- ADD CHOPPED CAPSICUM AND SAUTE
- KEEP THIS ASIDE
- IN SAME WOK ADD LITTLE OIL AND FRY THE BOILED RICE
- ADD VEGGIES,EGGS AND CHICKEN AND SAUTE
- ADD SOYA SAUCE AND PEPPER PDR{IF U WANT IT MORE HOT}
- TRANFER TO A SERVING PLATE AND GARNISH WITH SPRING ONIONS
- ENJOY..........................
