PINK PASSION OR WATERMELON SHAKE

                                                    In the summer we are always thirsty and try out different shakes or juices..............now in this part of the world were i live its so hot that every 10 min we have to drink something to keep our bodies from being drained out..............so to make my sonny boy drink water in some form i try out different shakes and juices..........and thankfully this is also the time were we get many fruits with high water content like the watermelons.............last day i brought a big watermelon and my son was really bored drinking the normal watermelon juice..........so itried out thisshake wit watermelons.......this was really tasty that all three of us ended up drinking so much that we missed our lunch.............so try out juices that we make at home rather than give children all those readymade juices whoose contents we are not even sure off.............





INGREDIENTS:

WATER MELON DESEEDED              -1/2 CUP
COLD MILK                                          -1 CUP
SUGAR                                                   -AS NEEDED
VANILLA ICE CREAM                          -2 SCOOPES


METHOD:

MIX ALL THESE IN A MIXIE AND SERVE COLD...............WATER MELON SHAKE IS READY..............

ORANGE ROSES

I always like to roam in the baking section in supermarkets just to see what all new things have come...............every time i ll be coming out with something from there........in one such expeditions i saw this silicon rose cake mould......actually i had a doubt using this silicon mould becoz i have never used them before............i felt like they would melt in my oven............but these mould was so beautiful that i couldnt just leave it there....actually there was so many moulds but these cute little roses won my heart and i just bought them....... since then they have been my favourites..........my all doubts about silicon moulds were gone coz they are really easy 2 use nd cakes are easy to remove from tray..............these cakes look like little roses and kids will really love them.........i made many cakes in this but this orange roses were really the star of all.........so i want to share the recipe of this simple orange cake..............orange is one of my fav flavours..............you can try this cupcake recipe in any mould you have...........so try nd enjoy....................


INGREDIENTS:
ALLPURPOSE FLOUR           -1 CUP
SUGAR                                  -1/2 CUP
OIL                                         -1/2 CUP
ORANGE JUICE                    -1/2 CUP
BAKING PDR                        -1 TSP 
EGGS                              -2
ORANGE RIND                     -1 TSP


METHOD:


  1. BEAT EGGS AND SUGAR TILL CREAMY
  2. ADD OIL TO THIS AND BEAT TILL IT IS MIXED
  3. ADD ORANGE JUICE AND RIND TO THIS AND BEAT FOR 5 MORE MIN
  4. SIEVE TOGETHER FLOUR AND BAKING PDR ATLEAST 2 TIMES
  5. ADD THIS TO THE EGG MIX AND MIX USING A SPOON
  6. GREASE A CU[PCAKE MOULD WITH VEG OIL AND ADD THE CONTENTS TO IT
  7. BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 25 MIN OR UNTIL A SKEWER INSERTED COMES OUT CLEAN........
  8. REMOVE FROM MOULD AFTER IT IS COOLED
  9. ENJOY.......................

CHOCOLATE CUPCAKES

                                              Eventhough iam a cake addict i dont like chocolate cakes.............i eat them if they come disguised as black forest and all..................but my kiddo luves this and so i make these easy cup cakes for him.........best thing about this is that my whole flat smells of chocolate after baking this..........so try this and enjoy...................

INGREDIENTS:

ALL PURPOSE FLOUR                 -3/4 CUP
COCOA PDR                                  -1/4 CUP
VEG OIL                                          -1/2 CUP
MILK                                                -1/2 CUP
SUGAR                                              -1/2 CUP
EGGS                                                  -2
BAKING PDR                                    -1 TSP

METHOD:


  1. BEAT TOGETHER SUGAR AND EGGS TILL CREAMY....................
  2. ADD OIL TO THIS AND BEAT FOR ANOTHER 5 MIN TILL IT IS FULLY MIXED UP............
  3. NOW ADD MIL AND BEAT FOR 2 MIN................
  4. SIEVE TOGETHER ALL PURPOSE FLOUR,COCOA PDR AND BAKING PDR FOR ATLEAST 2 TIMES.............
  5. ADD THE DRY INGREDIENTS TO WET ONES AND MIX WITH A SPOON................
  6. GREASE A CUPCAKE BAKING DISH WITH COOKING SPRAY............
  7. ADD THE MIX TO THE DISH AND BAKE IN A PREHEATED OVEN AT 180 DEGREE FOR 25 MIN OR UNTIL A SKEWER INSERTED COMES CLEAN............
  8. WAIT TILL IT COOLS AND ENJOY UR TINY CUP OF CHOCOLATE....................

PUMPKIN KHEER aka MATHANGA PAYASAM

                                           Chilled desserts in this summer are really like an oasis in the desert.in this weather we crave for chilled items every time.............we even have an aversion towards hot food..............pumpkin kheer is really a great choice in all types of weather coz u can eat it cold or hot as your wish.................and this is a great option for kids who dont eat pumpkin when we make curries.........................so try and enjoy............



INGREDIENTS:

PUMPKIN                   -250 GM
MILK                           - 500 ML
SUGAR                         - AS MUCH U LIKE
CARDAMOM PDR      -1 TSP
ALMOND                     -1/2 CUP SOAKED IN WATER
PISTA FOR GARNISHING



METHOD:

  1. PRESSURE COOK PUMPKIN WITH LITTLE WATER FOR 1 WHISTLE AND KEEP ASIDE.
  2. BOIL MILK IN A NONSTICK PAN
  3. MASH THE COOKED PUMPKIN WITH A POTATO MASHER AND ADD TO THE MILK AND STIR
  4. GRIND THE SOAKED ALMONDS TO A FINE PASTE
  5. ADD THIS TO THE PUMPKIN MILK MIX AND COOK FOR 5 MIN UNTIL MIX BECOMES THICK.
  6. ADD SUGAR AND CARDAMOM PDR AND STIR TILL IT IS MIXED WELL
  7. REMOVE FROM FIRE
  8. GARNISH WITH PISTA
  9. CHILL AND SERVE.........................

SAUSAGE PARCELS

                                 Something that always makes mothers confused is how to feed a fussy kid.............we want them to eat their food happily and at the same time make it healthy.............my son is a really fussy one who is very picky abt what he eats.........every morning i have to wake 15 min early just to think what i will pack for my sons tiffin............he likes sausages nd so i made this sausage parcels which is a little spicy one so that dh will also have this for brekky............. try this nd enjoy..............


INGREDIENTS:

SAUSAGES                -4
ONION SLICED         -1
GARLIC CHOPPED    -2
capsicum chopped        -1/4 cup
TO MATO SAUCE      -2 TBLSPN
OIL                               - 1 TBLSPN
CHAPATHIS                -3


METHOD:
  1. CUT SAUSAGES INTO SMALL CUBES
  2. ADD OIL IN A KADAI AND SAUTE ONIONS
  3. ADD CHOPPED GARLIC AND SAUTE
  4. THEN ADD CAPSICUM FOLLOWED BY SAUSAGES
  5. ADD TOMATO SAUCE TO THIS AND ADD SALT ACCORDINGLY
  6. COOK TILL SAUSAGES ARE DONE
  7. THIS IS THE FILLING FOR SAUSAGE PARCEL
  8. NOW TAKE ONE CHAPATHI AND FILL WITH SAUSAGE MASALA
  9. FOLD IT AND WRAP WITH SANWICH PAPER
  10. SAUSAGE PARCELS ARE READY

COUNTRY APPLE LOAF

                     Ever since i started blogging a new habit i noticed 4 me is that i never want to make a same dish again however tasty it was the first time............my dh is always complaining that in trying out new things iam omitting some of his favourites................that is the case with cakes also..........every time iam trying out new cake recipes..........i didnt want to repeat anything until i made this cake...............i had a doubt with this flavour before making this...........but now i always make this cake whenever i crave 4 something sweet............this is such an easy recipe also...........so try this nd enjoy..............


INGREDIENTS:

ALL PURPOSE FLOUR         -1 CUP
APPLES CHOPPED                -2 CUPS
CASTOR SUGAR                    -1 CUP
VEG OIL                                   -1/2 CUP
EGGS                                         -2
BAKING PDR                            -1 TSPN
CINNAMON PDR                      -1/2 TSPN
CHOPPED NUTS                        -FOR SPRINKLING ON TOP


METHOD:

  1. PREHEAT OVEN TO 170 C
  2. SEIVE FLOUR AND BAKING PDR ATLEAST 2 TIMES AND KEEP ASIDE
  3. BEAT EGGS AND SUGAR TILL CREAMY
  4. ADD OIL AND BEAT 4 SOME MORE TIME
  5. ADD FLOUR LITTLE BY LITTLE AND MIX WITH SPOON
  6. ADD APPLES AND CINNAMON PDR AND MIX
  7. GREASE A LOAF PAN WITH BAKING SPRAY
  8. ADD  BATTER TO PAN
  9. SPORINKLE WITH CHOPPED NUTS
  10. BAKE FOR 30 MIN OR UNTIL A SKEWER INSERTED COMES CLEAN...................

CHOCOLATE CHIP PUDDING AND 50

                                                      CHOCOLATE CHIP PUDDING AND 50-every one would be wondering what is this 50.................any guess???????????????oh no dont sat that u thought that this pudding needs 50 ingredients or it takes 50 tries to make or it needs 50 people to make it.................before ur guesses go wild ill only explain................this is my 50th post..................cant believe i already have a blog and i have successfully posted 50 recipes......................thankx for all the support from my fellow bloggers and readers......................

i was really in a confusion what to post for celebrating this 50...............i actually had a spicy chinese recipe in my draft..............but at last decided on this dessert coz for us indians celebrations always starts nd ends with sweets.....................this is an easy dessert to make with gelatin as the base.............every one should try this and enjoy.................



INGREDIENTS:

MILK                                     -500 ML
CONDENSED MILK             -1/2 TIN
GELATIN                                - 1 TBLSPN DISSOLVED IN 4 TBLSPN WATER
CHOCOLATE CHIPS             -1/2 CUP
FRESH CREAM                       - 1 TIN
COLOUR OPTIONAL



METHOD:

  1. HEAT MILK AND CONDENSED MILK TILL IT BOILS
  2. KEEP IT ASIDE
  3. MELT GELATIN BY DOUBLE BOILING METHOD
  4. ADD THIS TO THE MILK MIX AND MIX THOROUGHLY
  5. ADD CHOCOLATE CHIPS TO THIS MIX
  6. TRANSFER TO A CONTAINER AND KEEP IN FRIDGE FOR ATLEAST 4 HRS OR UNTIL THE PUDDING SETS
  7. ONECE THE PUDDING IS SET ADD THE CREAM MIXED WITH SOME COLOUR ON TOP OFTHE PUDDING

INGREDIENTS:

CHICKEN                           -1/2 KG CUT INTO BIG PIECES
GINGER- GARLIC PASTE - 2TBLSPN
GREEN CHILLY                  - 3-4
RED CHILLY PDR               -1TBLSPN
TURMERIC PDR                  -1/2 TSP
YOGHURT                            -3-4 TBLSPN
CORIANDER LEAVES            - LITTLE
CURRY LEAVES                    - A SPRIG
SALT TO TASTE
OIL FOR FRYING




METHOD:

  1. GRIND GINGER GARLIC,GREEN CHILLY,RED CHILLY PDR,TURMERIC PDR,CORIANDER LEAVES,CURRY LEAVES,SALT AND YOGHURT IN A GRINDER TO A PASTE.
  2. MARINATE THE CHICKEN WITH THIS GROUND PASTE OVER NIGHT OR FOR ATLEAST 5 HRS
  3. HEAT IN OIL IN A KADAI AND DEEP FRY THE CHICKEN PIECES TILL GOLDEN BROWN ON BOTH SIDES.......

CARROT FRENCH TOAST

                                               French toasts are something i make when iam not in a mood for an elaborate breakfast....................nd when i want to making something easy and that too enjoyed by my family................and when i want to make it more healthy and make my sonny boy eat veggies i add carrots to this....................carrots which are little sweet by itself goes very well with this toast...............so all should try this..........this makes a perfect lunch box item for kids also...................



INGREDIENTS:

BREAD SLICES                      -6
EGG                                          -3
MILK                                         - 2 TBLSPN
SUGAR                                       -3 TBLSPN
GRATED CARROT                      -1/4 CUP
CARDAMOM PDR                       -1/2 TSP
BUTTER                                         -1TBLSPN


METHOD:
  1. IN A MIXIE MIX EGGS ,MILK ,SUGAR AND CARDAMOM PDR AND TRANSFER TO A BOWL AN ADD GRATED CARROTS
  2. HEAT BUTTER IN A NONSTICK FRY PAN
  3. DIP BREAD PIECES IN EGG MIX AND FRY IN BUTTER TILL BOTH SIDES ARE GOLDEN.

MALABAR BANANA CAKE

                                  This is actually a recipe from the malabar side of kerala................me being from the other side dont know the actual recipe...................but i have tasted this so many times................so this is my version of this banana cake..............so all my friends from malabar side plzzz bear with me if this is not the actual recipe...............but one thing i can guarantee is it tastes very nice..............so try this and enjoy.......nd dont blame me if ur dress size increases.......................



INGREDIENTS


RIPE INDIAN YELLOW BANANA                       -2 BIG
EGG                                                                          -4
SUGAR                                                                     -1/2 CUP
CARDAMOM PDR                                                   -1/2 TSP
GHEE                                                                          - 2 TBLSP
MILK                                                                           -1 TBLSP





METHOD

  1. CUT BANANAS INTO CUBE SIZED PIECES
  2. ADD GHEE IN A NON STICK PAN AND FRY BANANAS TILL GOLDEN BROWN
  3. IN A MIXIE MIX EGGS,MILK,SUGAR AND CARDAMOM PDR
  4. IN A GREASED BAKING PAN SPREAD THE BANANA PIECES
  5. ADD THE EGG MIX N TOP OF IT
  6. BAKE IN A PREHEATED OVEN AT 160 C FOR 20 MIN OR UNTIL A SKEWER INSERTED COMES OUT CLEAN

MEAT PUFFS

                 Meat puffs always comes with nostalgic memories...................whenever i make this i always think of those childhood days when we used to go to bakeries and eat those puffs in the glass cupboards.................in those days i thought these were something only big chefs can make and requires great skill.................but coming abroad and seeing the readymade puff pastry sheets i now know that even kids can make it...................in this i have used a filling with beef kheema...................i also added some carrots and potatoes while making the filling so that my picky eater sonny will get to eat some veggies.......the trick always works becoz in the whole mix of masala he will never recogonize those..........all moms with picky eater kiddies should try this.............vegetarians can make their own filling by substituting beef with aloo,paneer etc.....................so try this and enjoy..................




INGREDIENTS

READYMADE PUFF PASTRY SHEETS                  - 1 PACKET
EGG                                                                            -1

FOR FILLING

BEEF KHEEMA                                                          - 1/4 KG
ONION CHOPPED                                                     - 2
GINGER GARLIC PASTE                                           - 1 TBLSPN
TOMATOES                                                                -2 CHOPPED

  1. THAW THE PUFF SHEETS ACCORDING TO INSTRUCTIONS ON PACK
  2. NOW MAKE THE MASALA
  3. PRESSURE COOK BEEF KHEEMA WITH RED CHILLY PDR,CORIANDER PDR AND TURMERIC PDR TILL DONE
  4. ADD OIL IN A KADAI AND SAUTE ONIONS TILL GOLDEN BROWN
  5. ADD GINGER GARLIC PASTE AND SAUTE FOR 5 MIN
  6. ADD TOMATOES AND SAUTE TILL THEY ARE SMASHED AND RAW SMELL GOES OFF
  7. ADD GRATED CARROT AND POTATOES AND SAUTE TILL COOKED
  8. ADD THE COOKED KHEEMA AND GREEN PEAS
  9. ADD GARAM MASALA PDR
  10. KEEP ON LOW F;LAME FOR 5 MIN
  11. ADD CORIANDER LEAVES
  12. THE KHEEMA MASALA IS READY


  1. PREHEAT OVEN To 210 C
  2. TAKE THE PASTRY SHEET AND FILL THE MASALA
  3. FOLD IT TO FORM A TRIANGLE

MIXED VEGETABLE UPMA

                                                  Breakfast is the biggest problem in my house.............dh and jr are really fussy when it comes to breakfast.................both have entirely different tastes..................if ever i ask the question what do you want for brekky today then iam trapped..................there will be a long list that keeps me in a thinking mode till lunch...............the question in my mind would be healthy or easy...................i know most of the moms with kiddies will be thinking like this...........but this breakfast is something thats very easy to make and at the same time healthy.............and in my place both kiddo and his father likes it.................so try this and enjoy.............

  4. WHEN ITS RAW SMELL GOES ADD THE VEGGIES
  5. SAUTE FOR 5 MIN
  6. ADD SALT AND WATER AND COVER AND COOK TILL WATER BOILS
  7. WHEN WATER BOILS ADD RAVA LITTLE BY LITTLE AND STIR
  8. WHEN ALL THE WATER DRAINS AND RAVA GETS COOKED REMOVE FROM FIRE.........
  9. SERVE HOT

SPICY CARROT CAKE

                     These days iam really very lazy to do any serious cooking................nd even if cook something iam too busy to take photos.............so i thought iam neglecting my blog a little.............nd then i thought of making this carrot cake to ease this laziness................
when i think of carrot cakes i think of greeshmas [my friend from college] mummys carrot cakes............that was the first time i had those cakes and had loved it since then..................so when i started my own cooking experiments one of the first things i tried were those cakes..........but i never got the taste as those cakes from college...............but when i made this cake i added some cake spices just for a change............and when i had a single bite from this i knew this was what i wanted...............it was just like that taste in my mind................nd i was so happy that i got the recipe at last..................so try this and enjoy...................



INGREDIENTS

ALL PURPOSE FLOUR                    -1 CUP
CARROT GRATED                            -1 CUP
CASTOR SUGAR                                -1 CUP
BUTTER                                               -3/4 CUP

  3. ADD EGGS ONE BY ONE AND BEAT TILL CREAMY  AND PEAKS ARE FORMED
  4. SEIVE FLOUR AND BAKING PDR AND SPICES
  5. ADD THIS TO EGG MIX AND MIX WELL USING A WOODEN SPOON
  6. ADD THE GRATED CARROT AND MIX WELL
  7. TRANSFER TO A BAKING PAN
  8. BAKE AT 18O FOR 40 MIN OR UNTIL A SKEWER INSERTED IN CAKE COMES OUT CLEAN

CARROT PANEER CHAPATHI

                                                          Sometimes its really strange that we think of making something and end up in something else.................. yesterday i had thought of making simple whole wheat chapathi............while i was going to knead the dough i saw 1 piece of carrot left over from some cooking.............first i thought of puting it back in fridge,,,,,,,,,,,,,
then i changed my mind coz i knew that the carrot wil sit in the fridge til it wilts and then i will have to throw it away................so i grated the carrot and added to the dough mix.....................
.then my always innovative mind became restless and decided to make the chapathi rich by adding some paneer and kasoori methi...........the end result was just some delicious chapathis............dh and jr enjoyed it............i was also happy that my carrot was used up and that too in a tasty way...........so try this and enjoy...............



INGREDIENTS:

WHOLE WHEAT FLOUR           -1 CUP
CARROT GRATED                      -1/4 CUP
PANEER                                        -1/4 CUP[MAKE A PASTE BY GRINDING WITH LITTLE
                                                                               WATER]
KASOORI METHI                         -1 TSP
WATER                                           -TO KNEAD A SOFT DOUGH


METHOD:

ADD ALL INGREDIENTS AND KNEAD TO MAKE A SOFT DOUGH..........KEEP IT COVERED FOR MINIMUM 15 MIN....................MAKE EQUAL SIZED BALLS AND ROLL INTO CHAPATHIS.............IN A HOT TAWA FRY THE CHAPATHIS TILL COOKED ON BOTH SIDES.........SERVE OT WITH ANY CURRY OF YOUR CHOICE.........ENJOY..........

COCONUT MACROONS

                                             My dh is not a great coconut lover..........eventhough occassional puddings with coconut are o.k.............i always say he s like a cuckoo in crows nest becoz being keralites there is no choice other than those with coconut...............
in the begining i found it very difficult to make curries with out including the main ingredient coconut...............but now i too got used to this anti coconut team with my sonny boy.....................
when i saw this recipe i just wanted to try it for a change thinking that only i will eat it....so i reduced the qty to half...........
but when these crunchy biscuits were baked my whole family fell heads over in love with this...........and the most important thing is that my anti coconut dh ate the most.............
now this is like a regular snack in the evening..............
nd so easy to make also..............try this and enjoy............


INGREDIENTS:

EGG WHITE                    -3
POWDERED SUGAR      -1 CUP
CORN FLOUR                 -1 TBLSPN
DESSICATED COCONUT -1 1/2 CUP
VANILLA ESSENCE         -1 TSP



METHOD:

  1. BEAT EGG WHITE UNTIL CREAMY AND SOFT PEAKS ARE FORMED.
