PINEAPPLE UPSIDE DOWN CAKE

                    I know this post is a little late for fathers day.........but i deliberately didnt post it yesterday becoz i dont think i should love my father only on fathers day..............my father would always say about the pineapple upside down cake my mom used to make when we were small...........but now whenever i ask my mom about the recipe she says she cant remember it...........so i decided to make it for my sweet and loving dad...............i know he s in india and cant eat what i make here in doha but still i  made this thinking about him............as i take every single bite from this i think about you ony dad..............this is from your little daughter whoose hands you used to hold when i was small...............and i know iam still that little daughter in his mind..........isnt it true tthat we only know howmuch our parents loved us when we are parents.........so dad i love and will always love you...............missing you so much...................

INGREDIENTS:

ALL PURPOSE FLOUR                     -1 CUP
BAKING PDR                                     -1 TSPN
DESSICATED COCONUT                 -1/4 CUP
EGGS                                                    -2
SUGAR                                                 -1/2 CUP
OIL                                                        -1/2 CUP
PINEAPPLE JUICE                               -1/2 CUP
CANNED PINE APPLE PIECES           -4
CHERIES





METHOD:

  1. PREHEAT OVEN AT 180 DEGREES
  2. BEAT TOGETHER EGGS AND SUGAR TILL CREAMY
  3. ADD OIL AND BEAT TILL MIXED
  4. SIEVE ALL DRY INGREDIENTS
  5. ADD TO EGG MIX AND MIX WITH A SPOON
  6. ADD PINEAPPLE JUICE AND MIX
  7. GREASE A BAKING DISH WITH BUTTER AND LAYER WITH PINEAPPLE PIECES
  8. ADD CHERRIES IN THE MIDDLE OF PINE APPLES
  9. ADD THE CAKE MIX ON TOP OF THIS AND BAKE AT 180 DEGREES FOR 45 MIN
  10. ALLOW IT TO COOL
  11. ONECE COOLED INVERT TO GET PINEAPPLE UPSIDE DOWN CAKE

ORANGE ROSES

I always like to roam in the baking section in supermarkets just to see what all new things have come...............every time i ll be coming out with something from there........in one such expeditions i saw this silicon rose cake mould......actually i had a doubt using this silicon mould becoz i have never used them before............i felt like they would melt in my oven............but these mould was so beautiful that i couldnt just leave it there....actually there was so many moulds but these cute little roses won my heart and i just bought them....... since then they have been my favourites..........my all doubts about silicon moulds were gone coz they are really easy 2 use nd cakes are easy to remove from tray..............these cakes look like little roses and kids will really love them.........i made many cakes in this but this orange roses were really the star of all.........so i want to share the recipe of this simple orange cake..............orange is one of my fav flavours..............you can try this cupcake recipe in any mould you have...........so try nd enjoy....................


INGREDIENTS:
ALLPURPOSE FLOUR           -1 CUP
SUGAR                                  -1/2 CUP
OIL                                         -1/2 CUP
ORANGE JUICE                    -1/2 CUP
BAKING PDR                        -1 TSP 
EGGS                              -2
ORANGE RIND                     -1 TSP


METHOD:


  1. BEAT EGGS AND SUGAR TILL CREAMY
  2. ADD OIL TO THIS AND BEAT TILL IT IS MIXED
  3. ADD ORANGE JUICE AND RIND TO THIS AND BEAT FOR 5 MORE MIN
  4. SIEVE TOGETHER FLOUR AND BAKING PDR ATLEAST 2 TIMES
  5. ADD THIS TO THE EGG MIX AND MIX USING A SPOON
  6. GREASE A CU[PCAKE MOULD WITH VEG OIL AND ADD THE CONTENTS TO IT
  7. BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 25 MIN OR UNTIL A SKEWER INSERTED COMES OUT CLEAN........
  8. REMOVE FROM MOULD AFTER IT IS COOLED
  9. ENJOY.......................

CHOCOLATE CUPCAKES

                                              Eventhough iam a cake addict i dont like chocolate cakes.............i eat them if they come disguised as black forest and all..................but my kiddo luves this and so i make these easy cup cakes for him.........best thing about this is that my whole flat smells of chocolate after baking this..........so try this and enjoy...................

INGREDIENTS:

ALL PURPOSE FLOUR                 -3/4 CUP
COCOA PDR                                  -1/4 CUP
VEG OIL                                          -1/2 CUP
MILK                                                -1/2 CUP
SUGAR                                              -1/2 CUP
EGGS                                                  -2
BAKING PDR                                    -1 TSP

METHOD:


  1. BEAT TOGETHER SUGAR AND EGGS TILL CREAMY....................
  2. ADD OIL TO THIS AND BEAT FOR ANOTHER 5 MIN TILL IT IS FULLY MIXED UP............
  3. NOW ADD MIL AND BEAT FOR 2 MIN................
  4. SIEVE TOGETHER ALL PURPOSE FLOUR,COCOA PDR AND BAKING PDR FOR ATLEAST 2 TIMES.............
  5. ADD THE DRY INGREDIENTS TO WET ONES AND MIX WITH A SPOON................
  6. GREASE A CUPCAKE BAKING DISH WITH COOKING SPRAY............
  7. ADD THE MIX TO THE DISH AND BAKE IN A PREHEATED OVEN AT 180 DEGREE FOR 25 MIN OR UNTIL A SKEWER INSERTED COMES CLEAN............
  8. WAIT TILL IT COOLS AND ENJOY UR TINY CUP OF CHOCOLATE....................

COUNTRY APPLE LOAF

                     Ever since i started blogging a new habit i noticed 4 me is that i never want to make a same dish again however tasty it was the first time............my dh is always complaining that in trying out new things iam omitting some of his favourites................that is the case with cakes also..........every time iam trying out new cake recipes..........i didnt want to repeat anything until i made this cake...............i had a doubt with this flavour before making this...........but now i always make this cake whenever i crave 4 something sweet............this is such an easy recipe also...........so try this nd enjoy..............


INGREDIENTS:

ALL PURPOSE FLOUR         -1 CUP
APPLES CHOPPED                -2 CUPS
CASTOR SUGAR                    -1 CUP
VEG OIL                                   -1/2 CUP
EGGS                                         -2
BAKING PDR                            -1 TSPN
CINNAMON PDR                      -1/2 TSPN
CHOPPED NUTS                        -FOR SPRINKLING ON TOP


METHOD:

  1. PREHEAT OVEN TO 170 C
  2. SEIVE FLOUR AND BAKING PDR ATLEAST 2 TIMES AND KEEP ASIDE
  3. BEAT EGGS AND SUGAR TILL CREAMY
  4. ADD OIL AND BEAT 4 SOME MORE TIME
  5. ADD FLOUR LITTLE BY LITTLE AND MIX WITH SPOON
  6. ADD APPLES AND CINNAMON PDR AND MIX
  7. GREASE A LOAF PAN WITH BAKING SPRAY
  8. ADD  BATTER TO PAN
  9. SPORINKLE WITH CHOPPED NUTS
  10. BAKE FOR 30 MIN OR UNTIL A SKEWER INSERTED COMES CLEAN...................

ACTUALLY I WANTED TO TAKE A PIC OF THE SLICE WITH APPLES BUT THE CAKE WAS FINISHED IN SECONDS..........SO MAYBE NEXT TIME...............

SPICY CARROT CAKE

                     These days iam really very lazy to do any serious cooking................nd even if cook something iam too busy to take photos.............so i thought iam neglecting my blog a little.............nd then i thought of making this carrot cake to ease this laziness................
when i think of carrot cakes i think of greeshmas [my friend from college] mummys carrot cakes............that was the first time i had those cakes and had loved it since then..................so when i started my own cooking experiments one of the first things i tried were those cakes..........but i never got the taste as those cakes from college...............but when i made this cake i added some cake spices just for a change............and when i had a single bite from this i knew this was what i wanted...............it was just like that taste in my mind................nd i was so happy that i got the recipe at last..................so try this and enjoy...................



INGREDIENTS

ALL PURPOSE FLOUR                    -1 CUP
CARROT GRATED                            -1 CUP
CASTOR SUGAR                                -1 CUP
BUTTER                                               -3/4 CUP
EGGS                                                     -3
BAKING PDR                                       - 1 TSP
CAKE SPICES[CARDAMOM,CLOVE  - 1 TBLSPN
NUTMEG,CINNAMON,CAKE JEERA
I USED THESE] [PDR ALL THESE]




METHOD

  1. PREHEAT OVEN AT 180C
  2. BEAT BUTTER AND SUGAR WITH AN ELECTRIC BEATER UNTIL SMOOTH
  3. ADD EGGS ONE BY ONE AND BEAT TILL CREAMY  AND PEAKS ARE FORMED
  4. SEIVE FLOUR AND BAKING PDR AND SPICES
  5. ADD THIS TO EGG MIX AND MIX WELL USING A WOODEN SPOON
  6. ADD THE GRATED CARROT AND MIX WELL
  7. TRANSFER TO A BAKING PAN
  8. BAKE AT 18O FOR 40 MIN OR UNTIL A SKEWER INSERTED IN CAKE COMES OUT CLEAN
  9. ENJOY...............................

STICKY TOFFEE DATE PUDDING

                                                Hi friends...............after a long gap im back to blogging.............these days due to some personal health reasons i have been not in a mood for any cooking or blogging..........
so nw im o.k and back to full fledge blogging.................nd i hav to catch up all events and posts from my blogger friends eventhough it will take some time............
This pudding is one of my family favourites..............so try and enjoy....................I got this recipe from classic essential puddings by Annie wilson..........




INGREDIENTS:

CHOPPED PITTED DATES                    -1 CUP
SELF RAISING FLOUR                          -1 CUP
BUTTER                                                    -1/2 CUP
BROWN SUGAR                                       -1/2 CUP[CAN USE ORDINARY CASTOR SUGAR
                                                                                         ALSO]
EGGS                                                           -2
VANILLA ESSENCE                                   -1 TSP


FOR TOFFEE SAUCE:
1 CUP BROWN SUGAR
1 CUP CREAM
1/4 CUP BUTTER
1/2 TSP VANILLA ESSENCE


METHOD:

  1. PRE HEAT OVEN TO 180C
  2. BRUSH A CAKE TIN WITH MELTED BUTTER AND LINE WITH BAKING PAPER
  3. PUT DATES IN A BOWL AND ADD 3/4 CUP BOILING WATER.STIR AND LEAVE FOR 15 MIN
  4. USING ELECTRIC BEATER BEAT BUTTER,SUGAR AND VANILLA UNTIL LIGHT AND CREAMY.GRADUALLY ADD EGGS BEATING WELL AFTER EACH ADDITION.FOLD IN HALF OF FLOUR MIX THEN HALF OF DATE MIX.STIR IN REMAINING FLOUR AND REMAINING DATES UNTIL WELL COMBINED
  5. POUR MIX INTO CAKE TIN AND BAKE FOR 40 MIN OR UNTIL A SKEWER INSERTED COMES OUT CLEAN WHEN INSERTED INTO CENTRE OF PUDDING
  6. LEAVE PUDDING IN TIN TO COOL FOR 10 MIN BEFORE TURNING OUT
  7. TO MAKE SAUCE PUT SUGAR, CREAM,BUTTER AND VANILLA ESSENCE IN A SMALL PAN AND BRING TO BOIL STIRRING.SIMMER THE SAUCE OVER LOW HEAT FOR 5 MIN.POUR OVER PUDDING AND SERVE WITH WHIPPED CREAM...............

NUTELLA SWISS ROLL

                                    My cutie pie likes swiss roll very much..........everytime we go 4 the grocery shopping he will always pick his swiss rolls.............so i thought why not try some at home........this was the first i made it and thank god it came nice...................so try this easy recipe for ur kids nd enjoy...............


INGREDIENTS

SELF RAISING FLOUR                                  -1/4 CUP
CASTOR SUGAR                                            -1/4 CUP
EGGS[SEPEARTED]                                        -3
CASTOR SUGAR FOR DUSTING
NUTELLA                                                        -5 TBLSP





METHOD:

  1. WHISK EGG YOLK AND SUGAR FOR 10 MIN UNTIL CREAMY
  2. FOLD IN FLOUR
  3. IN A SEPERATE VESSEL WHISK EGG WHITE UNTIL FLUFFY AND THE MIX TRAILS OFF THE WHISK IN RIBBONS.MIX THIS WITH FLOUR MIXTURE.
  4. SPOON INTO A GREASED AND LINED SWISS ROLL PAN
  5. BAKE IN A PREHEATED OVEN AT 200C UNTIL WELL RISEN AND FIRM TO TOUCH
  6. SPRINKLE A CLEAN KITCHEN TOWEL WITH CASTOR SUGAR AND INVERT CAKE TO TOWEL\
  7. REMOVE LINING PAPER
  8. ROLL CAKE FROM SHORTER SIDE AND LEAVE TO COOL
  9. WHEN COOL UNWRAP IT AND SPREAD WITH NUTELLA
  10. SERVE SPRINKLED WITH CASTOR SUGAR
  11. ENJOY......................

STRAWBERRY CAKE

                                         This cake was actually made without any preparations..........i was actually searching the freezer for some chicken and accidentally a bag of frozen strawberries came to my notice.......actually i had bought it long back and completely 4gotten about it.............so i thought why not make use of it and completly 4got my chicken and went with my mind to make this cake........this was a lovely treat after my fever and we enjoyed it.................

INGREDIENTS:


ALL PURPOSE FLOUR                 -1 CUP
CASTOR SUGAR                           -1 CUP
BUTTER                                          -3/4 CUP
EGGS                                               -3
BAKING PDR                                  - 1TSP
STRAWBERRIES[PUREED]            -1 CUP
  

METHOD:

  1. PREHEAT OVEN TO 180
  2. SIFT THE FLOUR WITH BAKING PDR 3 TIMES AND KEEP ASIDE
  3. BEAT BUTTER AND SUGAR TILL CREAMY
  4. TO THIS ADD EGGS ONE BY ONE AND BEAT TILL CREAMY
  5. TO THIS MIX FLOUR MIX WITH A SPOON .DO NOT BEAT
  6. ADD PUREED STRAWERRIES TO THIS AND MIX WELL
  7. GREASE A BAKING DISH WITH COOKING SPRAY
  8. TRANSFER THE CAKE BATTER TO THE BAKING DISH
  9. BAKE AT 180C FOR 30 MIN OR UNTIL A SKEWER INSETED COMES CLEAN

FOR DECORATION:

I USED LITTLE WHIPPED CREAM AND STRAWBERRIES ON TOP OF CAKE TO DECORATE...........YOU CAN DECORATE AS YOU LIKE OR EAT IT AS SUCH................

KINNATHAPPAM [RICE CAKE]

                            kinnathappam literally means cake in a plate.it may be so called becoz it is steamed in a plate..............my mom used to make kinnathappam on ramzan when i was small.at that time me and my sis used to hate it.we used to dream about all those doughnuts,muffins etc which were rare at that time.........but now when we are in the middle of all these things i luv to have my moms sweet kinnathappams................now i make this in the evenings and think of my mom..........iluv u mummy.................
there are many versions of kinnathappam..........this is how it is made in our home.typical thrissur[a district in kerala]style kinnathappam................
so this kinnathappam is for all those who miss their moms................oh i miss her so much............try this and enjoy.....................


INGREDIENTS:

ROASTED RICE FLOUR                      -2 CUP
JAGGERY                                              -1 CUP MELTED IN 2 TBLSPN WATER
COCONUT SCRAPPED                         -1/2 CUP
JEERA                                                    -1/2 TSP
SHALLOTS                                             -2-3
cardamom pdr                                          -a pinch
CASHEW NUTS                                      -FOR GARNISHING
GHEE                                                     -2 TSP


METHOD:

IN A MIXIE GRIND TOGETHER RICE FLOUR,JAGGERY,COCONUT,SHALLOTS,cardamom AND JEERA.MAKE A BATTER OF IDILY BATTER CONSISTENCY.IF U WANT ADD LITTLE WATER.GREASE A PLATE WITH GHEE.ADD THE BATTER TO THIS.ADD CHOPPED CASHEWS AND STEAM IN A STEAMER TILL A SKEWER INSETED COMES CLEAN...........enjoy

MALTASERS CHOCOLATE CAKE

                                                        Cakes are something i always like to make and eat.............after coming to doha i had been mad about baking and used to bake a cake a day..............but at that time i had not started this blog and so didnt take any photos..............but as iam on dieting now i have taken a resolution that i will only bake on special occasions.this cake i made for one of my cousins son.........he s the same age as my cutie pie and liked chocolate cake very much.i decorated this cake with maltasers and some jelly candies.........so try this easy recipe and enjoy....................


INGREDIENTS:

ALL PURPOSE FLOUR                         -1 CUP
CASTOR SUGAR                                   -1 CUP
BUTTER                                                  -3/4 CUP
EGGS                                                       -3
BAKING PDR                                          -1/2 TBLSPN
COCOA PDR                                            -1/2 CUP
VANILLA ESSENCE                                -1/2 TSP




FOR CHOCOLATE GANACHE:

DARK COOKING CHOCOLATE       -1 CUP
WHIPPING CREAM                             -1 CUP

FOR DECORATION:
MALTASERS                     -2 PKT
JELLY CANDIES                -2 PKT
COLOURED SPRINKLES

METHOD:
PREHEAT OVEN TO 180C.SIFT TOGETHER ALL PURPOSE FLOUR,BAKING PDR AND COCOA PDR 3 TIMES AND KEEP ASIDE.
BEAT BUTTER KEPT AT ROOM TEMPERATURE AND SUGAR TILL CREAMY USING AN ELECTRIC BEATER
ADD EGGS ONE BY ONE AND BEAT
ADD THE SIFTED INGREDIENTS AND VANILLA AND MIX WITH A WOODEN SPOON.DO NOT BEAT.TRANSFER THIS TO A GREASED BAKING PAN AND BAKE AT 180 C FOR 30.40 MIN.OR UNTIL A SKEWER INSERTED COMES CLEAN.............ALLOW IT TO COOL........
MEANWHILE PREPARE THE CHOCOLATE GANACHE...........MELT CHOCOLATE IN MICROWAVE AND ADD WHIPPED CREAM TO THIS..............WHEN THE CAKE IS COOLED POUR THIS OVER THE CAKE................DECORATE WITH YOUR OWN IDEAS............

ORANGE CHOCOLATE ZEBRA CAKE


                                   
if i read some recipe that interests me then i cannot rest until i make it.............all my dreams will be about that  recipe.........
            
this was one such recipe.i just saw the recipe for a zebra cake in faridas blog and it was so simple.........i just wanted to make it then itself............but what to do...........got only time today.........

today evening was a chilly day..............so i thought this cake would be perfect with a cup of coffee..............


This cake remind me of the orange chocolate flavour of brittania wondercake which we get in kerala.........
it was my favourite cake when i was small..............i still remember those small cakes in a little packet which my papa used to bring for me and my sis............ummmmm i miss my family............

ORANGE JUICE                            -1/2 CUP
ORANGE COLOUR[OPTIONAL]-A PINCH




METHOD:
PREHEAT OVEN TO 18O C..............
BEAT TOGETHER WITH AN ELECTRIC BEATER SUGAR AND EGGS TILL IT FORM A CREAMY MIX...........
ADD OIL TO IT AND BEAT..............
SIEVE FLOUR,VANILLA AND BAKING PDR 3 TIMES AND ADD TO THE MIX.............
DO NOT BEAT.............
MIX WITH A SPOON.................
DIVIDE THE BATTER INTO 2...................
TO FIRST PART ADD CHOCOLATE PDR & MILK AND MIX......
TO 2ND PART ADD ORANGE RIND AND ORANGE JUICE........AND COLOUR IF U ARE USING.........
SPRAY COOKING OIL INTO A BAKING PAN....................
POUR 3 TBLSPN OF ORANGE MIX INTO THE CENTRE OF THE PAN..................
THEN POUR 3 TBLSPN OF CHOCOLATE MIX INTO THE CENTRE.............
DO NOT STOP OR SPREAD THE MIX............
IT WILL SPREAD BY ITSELF.............
REPEAT TILL ALL MIX IS USED..............
BAKE AT 180 C FOR 30 MIN OR UNTIL A SKEWER INSERTED COMES CLEAN..........
ENJOY..................
