PAZHAM CURRY OR SWEET BANANA CURRY

                                  This pazham curry is one of the common breakfast in kerala with idiyappam [rice hoppers ].when we are abroad away from our home we will miss all these special treats of kerala............last time i went for vaccation i bought those idiyappam maker............then i started making this curry with  idiyappams...........in different parts of kerala they give different names for this curry.............in my side they call this aanam kachiyathu.in my hubby side its called pazham curry............in one cokery book i saw the name as chendamuriyan.................whatever the name this is one of the classic recipes of kerala passed on from generations..........so try nd enjoy...............





INGREDIENTS:

RIPE BIG BANANAS                           -2 CUT INTO SMALL PIECES
THICK COCONUT MILK                    -1 CUP
SUGAR                                                   -AS NEEDED
CARDAMOM PDR                                 -1 TSP
SHALLOTS CHOPPED                           -1 TBLSPN
GHEE                                                        -1 TBLSPN
SALT A PINCH




METHOD:


  1. COOK BANANAS WITH LITTLE WATER AND A PINCH OF SALT
  2. WHEN IT IS FULLY COOKED ADD COCONUT MILK AND COOK FOR 5 MIN
  3. ADD CARDAMOM PDR AND SUGAR
  4. REMOVE FROM FIRE AND KEEP ASIDE
  5. HEAT A KADAI AND ADD GHEE
  6. PUT SHALLOTS AND FRY TILL BROWN
  7. ADD THIS TO THE BANANA COCONUT MITURE AND MIX
  8. PAZHAM CURRY IS READY
  9. SERVE HOT

MOONGDAL KOZHUKATTA

                      Kozhukattas OR RICE DUMPLINGS are one of my fav snacks from kerala and i love it any time of the day............we usually make it with coconut and jaggery stuffing.............but recently i saw this moongdal stuffing in one of my fav blogs MY FAVOURITE FOOD BY GANGA SREEKANTH..................i tried it then itself and it turned out so good...........the crunchy moondal stuffing is so nice that i couldnt stop even with 2...........
                  this is a keeper recipe..........i will make kozhukattas nw with only this stuffing..............thanx ganga for sharing this recipe............i made it exactly the same way as she made without any changes.......so iam not giving the ingredients and method again........the recipe is here.so try nd enjoy.........

SAUSAGE PARCELS

                                 Something that always makes mothers confused is how to feed a fussy kid.............we want them to eat their food happily and at the same time make it healthy.............my son is a really fussy one who is very picky abt what he eats.........every morning i have to wake 15 min early just to think what i will pack for my sons tiffin............he likes sausages nd so i made this sausage parcels which is a little spicy one so that dh will also have this for brekky............. try this nd enjoy..............


INGREDIENTS:

SAUSAGES                -4
ONION SLICED         -1
GARLIC CHOPPED    -2
capsicum chopped        -1/4 cup
TO MATO SAUCE      -2 TBLSPN
OIL                               - 1 TBLSPN
CHAPATHIS                -3


METHOD:
  1. CUT SAUSAGES INTO SMALL CUBES
  2. ADD OIL IN A KADAI AND SAUTE ONIONS
  3. ADD CHOPPED GARLIC AND SAUTE
  4. THEN ADD CAPSICUM FOLLOWED BY SAUSAGES
  5. ADD TOMATO SAUCE TO THIS AND ADD SALT ACCORDINGLY
  6. COOK TILL SAUSAGES ARE DONE
  7. THIS IS THE FILLING FOR SAUSAGE PARCEL
  8. NOW TAKE ONE CHAPATHI AND FILL WITH SAUSAGE MASALA
  9. FOLD IT AND WRAP WITH SANWICH PAPER
  10. SAUSAGE PARCELS ARE READY
FOR KIDS U CAN AVOID THE MASALA AND JUST WRAP SAUSAGES IN THE CHAPATHI.......

CARROT FRENCH TOAST

                                               French toasts are something i make when iam not in a mood for an elaborate breakfast....................nd when i want to making something easy and that too enjoyed by my family................and when i want to make it more healthy and make my sonny boy eat veggies i add carrots to this....................carrots which are little sweet by itself goes very well with this toast...............so all should try this..........this makes a perfect lunch box item for kids also...................



INGREDIENTS:

BREAD SLICES                      -6
EGG                                          -3
MILK                                         - 2 TBLSPN
SUGAR                                       -3 TBLSPN
GRATED CARROT                      -1/4 CUP
CARDAMOM PDR                       -1/2 TSP
BUTTER                                         -1TBLSPN


METHOD:
  1. IN A MIXIE MIX EGGS ,MILK ,SUGAR AND CARDAMOM PDR AND TRANSFER TO A BOWL AN ADD GRATED CARROTS
  2. HEAT BUTTER IN A NONSTICK FRY PAN
  3. DIP BREAD PIECES IN EGG MIX AND FRY IN BUTTER TILL BOTH SIDES ARE GOLDEN.
  4. SERVE HOT WITH A CUP OF STEAMING TEA
  5. ENJOY.....................

MIXED VEGETABLE UPMA

                                                  Breakfast is the biggest problem in my house.............dh and jr are really fussy when it comes to breakfast.................both have entirely different tastes..................if ever i ask the question what do you want for brekky today then iam trapped..................there will be a long list that keeps me in a thinking mode till lunch...............the question in my mind would be healthy or easy...................i know most of the moms with kiddies will be thinking like this...........but this breakfast is something thats very easy to make and at the same time healthy.............and in my place both kiddo and his father likes it.................so try this and enjoy.............


INGREDIENTS

ROASTED RAVA/SEMOLINA                      -1 CUP
MIXED VEGGIES                                            -3/4 CUP
ONIONS CHOPPED                                        - 1 SMALL
GINGER CHOPPED                                         - 1 TSP
GREEN CHILLY CHOPPED                            -1 
MUSTARD SEEDS                                            -1 TSP
OIL/GHEE                                                          - 1/2 TBLSPN
CURRY LEAVES                                                - A SPRIG
WATER                                                               -1 1/4 CUP
SALT TO TASTE

U CAN ADD ANY VEGGIES U LIKE.I ADDED CARROT,BEANS,GREEN PEAS AND CORN..............


METHOD

  1. ADD A LITTLE OIL IN A KADAI AND ADD MUSTARD LEAVES.
  2. WHEN IT SPLUTTERS ADD CURRY LEAVES AND ONIONS AND SAUTE
  3. THEN ADD GINGER AND GREEN CHILLY
  4. WHEN ITS RAW SMELL GOES ADD THE VEGGIES
  5. SAUTE FOR 5 MIN
  6. ADD SALT AND WATER AND COVER AND COOK TILL WATER BOILS
  7. WHEN WATER BOILS ADD RAVA LITTLE BY LITTLE AND STIR
  8. WHEN ALL THE WATER DRAINS AND RAVA GETS COOKED REMOVE FROM FIRE.........
  9. SERVE HOT
  10. ENJOY..............

CARROT PANEER CHAPATHI

                                                          Sometimes its really strange that we think of making something and end up in something else.................. yesterday i had thought of making simple whole wheat chapathi............while i was going to knead the dough i saw 1 piece of carrot left over from some cooking.............first i thought of puting it back in fridge,,,,,,,,,,,,,
then i changed my mind coz i knew that the carrot wil sit in the fridge til it wilts and then i will have to throw it away................so i grated the carrot and added to the dough mix.....................
.then my always innovative mind became restless and decided to make the chapathi rich by adding some paneer and kasoori methi...........the end result was just some delicious chapathis............dh and jr enjoyed it............i was also happy that my carrot was used up and that too in a tasty way...........so try this and enjoy...............



INGREDIENTS:

WHOLE WHEAT FLOUR           -1 CUP
CARROT GRATED                      -1/4 CUP
PANEER                                        -1/4 CUP[MAKE A PASTE BY GRINDING WITH LITTLE
                                                                               WATER]
KASOORI METHI                         -1 TSP
WATER                                           -TO KNEAD A SOFT DOUGH


METHOD:

ADD ALL INGREDIENTS AND KNEAD TO MAKE A SOFT DOUGH..........KEEP IT COVERED FOR MINIMUM 15 MIN....................MAKE EQUAL SIZED BALLS AND ROLL INTO CHAPATHIS.............IN A HOT TAWA FRY THE CHAPATHIS TILL COOKED ON BOTH SIDES.........SERVE OT WITH ANY CURRY OF YOUR CHOICE.........ENJOY..........

SWEET IDILY FOR KIDS

                                      
                                                               Today also iam posting a recycled item.........i mean made with left overs.............when yesterdays idily roast was for adults [me nd dh]this sweet idily is for sonny boy..........this is easy to make and kids will love it in their lunch box...............
try this and enjoy................


INGREDIENTS:


IDILY                            -4[CUT INTO CUBES]
BUTTER                        -2 TBLSPN
SUGAR                          -2 TSP
SPRINKLES[OPTIONAL]




METHOD:

HEAT BUTTER IN A NONSTICK PAN.
ADD SUGAR ND STIR FOR 10 SEC
ADD THE IDILY CUBES AND SAUTE FOR 2 MIN
TRANSFER TO SERVING DISH
GARNISH WITH COLOURED SPRINKLES OR U CAN ADD NUTS IF  U WANT.............................

IDILY ROAST

                                        Making use of left overs are something we ladies are good at...............actually it is a craft.................everyone have their own versions of left over dishes...............my MIL often makes this idily roast with the left over idilies from breakfast..............hubby dear loves this so much.........eventhough sonny boy is not so keen on this as this is little spicy............but for him i make SWEET IDILY the recipe of which i will post later.............this is a very good lunch box item also.............
so try this and enjoy..................................


INGREDIENTS:

LEFT OVER IDILY          -6 CUT INTO CUBES
ONION CHOPPED          -1
GIN-GAR PASTE             -1 TBLSP
TOMATO CHOPPED       -1
GREEN CHILLY               -2
TURMERIC PDR               -1/2 TSP
SAMBAR PDR                   -1 TSP
MUSTARD SEEDS             -1 TSP
URAD DAL                         -1TSP
OIL                                       -1/2 TBLSP
CURRY LEAVES
CORIANDER LEAVES
SALT TO TASTE





METHOD:

  1. HEAT LITTLE OIL IN A KADAI AND ADD MUSTARD SEEDS
  2. AFTER IT SPLUTTER ADD URAD DAL AND CURRY LEAVES
  3. AFTER 10 SEC SAUTE ONIONS,GING-GAR PASTE,GREEN CHILLIES FOR 5 MIN OR TILL RAW SMELL GOES
  4. THEN SAUTE TOMATOES TILL OIL OOZES OUT
  5. ADD TURMERC ,SALT AND SAMBAR PDR AND SAUTE FOR 30 SEC
  6. ADD LITTLE WATER AND LET MASALAS GET COOKED
  7. ADD THE IDILY CUT INTO CUBES TO THIS
  8. MIX FOR 5 MIN
  9. CLOSE LID OF KADAI AND KEEP IN LOW FLAME FOR 5 MIN
  10. TRANSFER TO A SEVING PLATE AND GARNISH VTH CORIANDER LEAVES
  11. ENJOY...................
